Here is one of my all time favorite things to do for breakfast.  They reheat well and you can throw in almost any veggies laying around.  Post Food Logs below.

PALEO BREAKFAST MUFFINS (WHOLE 30 APPROVED)

Serves: 12 muffins
INGREDIENTS
  • 9 large eggs
  • 8 ounces ground breakfast sausage
  • 1 red, green, or yellow pepper, I used a mix of colors because that is what I had
  • ½ cup frozen kale, chopped
  • ¼ teaspoon pepper
INSTRUCTIONS
  1. Preheat oven to 350 degrees, spray a muffin tin with non-sticking cooking spray or use coconut oil. I used coconut oil. Set aside.
  2. Brown the ground sausage in a medium-sized pan over medium-heat.
  3. In a large mixing bowl, whisk the eggs and then add in the sausage, peppers, kale, and pepper. Pour the batter into the muffin tins, filling ¾ of the way. Bake for 20-25 minutes, my oven needed 23 minutes.
  4. Allow the muffins to cool for 5 minutes, use a knife to loosen from the sides.

    AM snack- granola bar
    L- leftover lasagna
    PM snack- kind bar
    D- Kobe beef patty, grilled asparagus and roasted sweet potato

    Workout- ran my first 10k and just happy I actually completed it!

    D - 2 eggs, Protein bar, water

  5. B: 3 eggs with bacon pieces, salsa, Pico, coffee with cream
    L: ground beef, bell peppers, onions, mushrooms, tomato sauce, rice
    S: half roll of sushi
    D: paleo chili with 1T sour cream and sprinkle of cheese
